The hotel industry is waiting for orders on when to open; when it does there will no doubt be guidelines on how to serve diners safely. A forward-thinking restaurant in Amsterdam has already created a set of ‘quarantine greenhouses’ along its waterfront terrace where guests can sample a four-course, plant-based menuWaiting staff wears face shields and gloves, serving mainly locally sourced dishes on extra-long wooden boards to avoid contact with diners. 

Located in Oosterdok, the extensive waterside district that’s undergone one of the city's most vibrant regeneration projects, Mediamatic Eten is the restaurant of the innovative Dutch arts centre Mediamatic, which hosts events and educational workshops with a focus on media, technology, and sustainability. The centre remains closed but has found a typically original way to flourish and allow up to three guests to dine out together once they open again. They have named the project Serres Séparées, or separate greenhouses in English. The restaurant remains closed but is taking bookings from 21 May onwards.
